First, install the Mac OS X Developer Tools (Xcode), including the X11
SDK (found on the Developer Tools/Xcode CD, or in
/Applications/Installers on new computers that shipped with Panther).
You'll need them to install a lot of this sort of stuff.
Fink - http://fink.sourceforge.net/ - a large collection of UNIX and
X11 software ports for Mac OS X (and Darwin), and a package management
system to install and manage them. FinkCommander, a graphical front-end
to Fink, comes with the latest versions of Fink. Be certain to read the
FAQ: http://fink.sourceforge.net/faq/
DarwinPorts - http://darwinports.opendarwin.org/ - another ports
collection for Mac OS X (and Darwin), maintained by the OpenDarwin
project. Not as large a library as Fink, but a different philosophy for
installing and maintaining ports.
Some X11 software will come as standalone binaries or installers, such
as OpenOffice, or this specially packaged version of The Gimp:

common non-commercial X11 software is via something like Fink.
