You need the string "tcp/", the machine name, a colon, and the port. If you
don't know the machine name, you can use its IP address, which will be part
of the output of /sbin/ifconfig. For example, the G4 I'm typing this at
gives this as part of its "xset q";

tcp/10.0.0.41:7100
[...]
That is to say, the X server is using a remote font server running on my
broken laptop, whose IP address is 10.0.0.41. That font server is listening
on port 7100.

XTerm is a special case; it supports both client side and server side
fonts. With it, you can put the fonts wherever.
Matlab, as far as I know, is a pretty old school X11 application, and it's
only apps that have been developed or updated relatively recently that use
client side fonts. You should be able to use server side fonts with it.
