Pretty much any IMAP client can work with Exchange when it comes to
email (provided the server administrator is willing to turn on the IMAP
capabilities of Exchange). I use Apple's own Mail.app very happily with
our exchange server at work.
The real challenge is all the non-email aspects of Exchange, the group
calendaring and task management, public folders and such like. That
requires special coding to accommodate the details of Exchange itself.
I use Evolution under Linux for that, and it gets me a good amount of
the functionality, but by no means all of it. It's certainly a lot
better than Outlook Web Access and a web browser.
I don't know of anything other than Microsoft's own offerings that
works under OS X, and don't know how well those work because I haven't
tried them.
