I found out how to set an environment variable by editing a file

that's only useful for us tech heads since we can edit a file and
be on our way. Is there a Mac way to set a variable in a
"registry" that I can use across our native and/or X11
applications? Or maybe a command line program I can run which
sets this variable rather than hacking around an XML file?
defaults write ~/.MacOSX/environment VARIABLE value
(Note that there's no ".plist" after environment.)
