Probably some preference that you can change...
Yeah. In your Mighty Mouse control panel, you set what the "middle-click"
does. If you want to paste, set middle-click to "Button 3." It's set to
Dashboard by default.
Usually option-leftclick will function as paste, though for this to function
you need to select "Emulate Three-button Mouse" from the X11 preferences.
You are right about it not Cmd-V not copying the text if you deselect it
after Cmd-C. That just seems wrong. It's acting like Cmd-C just tells the
Mac that X11 "owns" the clipboard selection, but doesn't actually copy it
until another app does Ctrl-V. At that point, it asks X11 what the
selection is and there isn't one any more.
Here Cmd-V in X11 just produces a beep (even if there's something to paste
from the Mac OS X clipboard or X clipboard). I suppose that it is not used
at all in X11 (possibly except in its own windows, like "Customize Menu",
but I haven't tried).
Since paste is handled by middleclick, in X11 cmd-V is always a greyed-out
menu option.
