I've had trouble with Adobe products in the past when using case sensitive file systems.
If you are interested in experimenting, I suggest you grab a copy of the excellent Carbon Copy Cloner (CCC). With CCC, you can clone your drive or partition from a case insensitive file to a case sensitive one and vice versa. This way, you avoid the trouble of reinstalling the whole stuff.

But I'm more likely to download a tarball that contains files that will step on each other if case is ignored than to get some Mac OS X software that expects "test" and "TEST" to be the same. The only problem I can recall offhand is a piece of Garmin software that expected case insensitivity. I had to delve into the .app package to fix the file name ("Info.plist" instead of "info.plist", as I recall), and then I notified Garmin. They fixed it in the next release.
