Don't. If you build with quartz support, you are on your own. I
don't know of anyone that tries to mix the two in one build.
If I disable quartz support, I don't get anymore errors when I fire
up gtk-demo but the X11 emacs become extremely slow to render its
window (really extremely slow... A minute to get the display from a
server meters from where I am on a Gigabit network!).

Use the previous version of pango to work around the issue.
Additionally, SnowLeopard ships cairo in /usr/X11 ... so you don't
need to build your own. Just build pango and gtk2.
