Install 2.6.3 first, then run launchctl load ...
Give 2.7.0_beta1 a try.
Also, you can manually launch the application from /Applications/Utilities/XQuartz.app even if it's not the default server (same for X11.app if XQuartz is default).

I uninstalled XQuartz 2.6.3 by following the instructions at http://xquartz.macosforge.org/trac/wiki/X11-UsersFAQ -- running "launchctl unload ..." and logging out and back in.

Even after logging out and back in, I'm still getting Apple's X11.app. What am I doing wrong?

Operations that should be nearly instantaneous take 10-20 seconds. The problem does *not* occur on any other systems (including a Linux VM running on the MacBook) or with Apple's X11.app, so it appears to be due to XQuartz. I'd file a bug report, but at the moment I can't reproduce the problem since I can't switch back to XQuartz!
