No, XQuartz doesn't replace anything. It installs a new LaunchAgent and
LaunchDaemon. You can disable the LaunchAgent if you want to default back
to X11.app. You will need to logout and log back in of course, to get the
correct $DISPLAY.
It "replaces" in the sense that only one of them can be active within
launchd, such that X11 connections are forwarded by launchd, at any given
time. $DISPLAY can only be one value.
Well, affecting an environment variable is much different than replacing all of X11. On Leopard, XQuartz actually did replace the host X11 (ie /usr/X11 and /Applications/Utilities/X11.app), so I wanted to clarify that it doesn't do that on SL and later.
Which I unfortunately figured out after deleting X11.app. Sigh....
