I'm trying to preprocess info.plist to write a compiler variable into
a key, and it won't do it. A string, yes, but not a key.
Is there a way to stop com.apple.tools.info-plist-utility from being
so helpful?

So, this had an interesting answer.
Putting symbols in the target settings was my mistake. They are not
put into keys for some reason, but will be put into strings just fine.
However, putting the symbols into INFOPLIST_PREPROCESSOR_DEFINITIONS
did what I wanted, and didn't keep me from modifying keys.
I'm curious to know why the distinction, in case anyone knows.
