I’m with Fritz — I totally don’t see how this is harder than managing the environment in shell windows and making sure to launch instances of Xcode from those. Maybe it’s just that you’re already used to it.
In any case, I think the answer to your original question is that you just can’t do that anymore with Xcode 4. It was never supported; I guess you just got lucky that you used to be able to run multiple copies of Xcode without all hell breaking loose.
