I'm trying to get the content of every "Received: " fields from the header of a message in Mail.app using an Applescript.

Try this:

content of headers of message 1 of message viewer 1 whose name is "received"

Of course you will have to change it slightly to reflect the message you want instead of the first message in the message viewer.

Also note that there is no final colon in the name of the header.
