Icons wouldn't exactly be "open source", at least unless you had POVRay
or PostScript source or something :-). There are a few companies
currently designing icons for Mac OS X... take a look at
http://developer.apple.com/business/aida.html
for a list. Some of them have free icons as well as their commercial
offerings (Iconfactory certainly have, for example), although mostly
they are icons for use in Finder.
You do need to realise that Icons for Mac OS X are *difficult* to
design, even for professional graphic artists, because of the
pseudo-photorealistic requirement as well as the fact that they are
usually not all that large on screen, but might be viewed at up to
128x128... i.e. there has to be sufficient detail to look realistic at
128x128, but it mustn't get in the way when they are shrunk down as
small as 16x16!
