Physician, heal thyself. I can tell that there's a toolbar along the left
side of a window instead of the top without needing the window to be metal.
I hate always selecting the wrong modifier key to extend a selection between
OS 9 and OS X [cmd in one, shift in the other, different for no discernable
reason].

Though by my reasoning the toolbar should be on the top... Hrm. I don't mind Metal for iTunes (try to imagine an Aqua iTunes), but I do tend to prefer Aqua in my productivity applications, such as Mail, SubEthaEdit as it is now, etc...

If anything, over the last couple of years, Apple has lost their way with
keeping things consistent. I'm not against change to make things better,
but I am against changes that appear to be random, like removing the
Internet panel from System Preferences and instead, having the settings for
what browser/mail app to use within Safari/Mail. I would expect this kind
of thing on WinXP, not OS X.

This I completely agree with, those are system settings, not application settings, and as the HIG states, they should be in the system preferences.
