search kit document properties

I am looking into using search kit to index and search objects in my application. I am wondering what the best approach to this is. I haven't been able to find much info on using it for less document oriented applications. Basically what I want to do is index the key value pairs in my objects and allow searching based on the values. Some objects may include larger text fields that would then represent the document text. If I simply supply the key value pairs for an object as the document properties will a search return results based on these properties as expected? Are there any other gotchas I should be aware of in using search kit for something like this?

I am also interested if anyone has any sample code that uses search kit...
