In the Properties pane of your target's Get Info panel, there's a table where you can set Document Types. Fill in the following columns:
Name: My Document Format
Extensions: myext
OS Types: myext
Icon File: MyDocIcon <- here
Role: Editor

The icon will work with -writeToFile even if your app isn't document-based, so long as the path extension matches .myext.
