Well, first, iTunes is a Carbon app and I'm not sure the situation is the same in Carbon.

Also I am just not experienced enough to answer that question.

I did develop a document based app (well, it's not really done, but the document part works) that is not one you would normally associate with documents (it's an serial communications app). Im my case I use the document paradigm to save distinct session settings. Works well.
While some substantial work was necessary to adapt the document structure to fit my case I can't say if it would have been easier or harder to build all that on my own.

I guess it really depends on your specific needs and how well those fit the existing document model.
