Look into NSApp -terminate:
This will call your applicationShouldTerminate.
The NSApplication class documentation provides more details on what events occur when an app terminates/quits such as posting a notification NSApplicationWillTerminateNotificiation.

You can implement the windowShouldClose method in the delegate of your
window.
In this method, you can then do whatever things you need to do when the
window is closed
such as to save the document (assuming your implementing a doc based
app).
You need to return YES or NO if you want the window to close.
