My question was simple: "In Mail, is it possible to set the priority of
a message while composing an email message to someone?"

I am on hold at the moment with a "Craig" at AppleCare. I am waiting on
hold as he researches my question. Normally, I would not think this was
such a difficult question, but considering his first three responses, I
guess I should have expected it.

When asked if one could set the message priority within Mail, his first
three responses were as follows:

1. "Hmm... it must be a Microsoft thing. They have too much
unneccessary things in Entorage."

2. "Isn't the subject line where you would show priority?"

3. "Setting the priority, huh? I bet spammers would love to do that."

:: 10 MINUTES LATER ::

Well, Craig came back. The official answer is "nobody knows." He agreed
that I should send a message into the developer group for Mail. Other
than that, there is no way that AppleCare is aware of.

So, the question still remains. Does anyone have a way to set the
message priority within Mail?
