I do not have the answer, but daapd does this, so you can take a look at the source. http://www.deleet.de/projekte/daap/daapd/

You might also want to look at the MPEG4IP project on Source Forge, since it seems to handle AAC metadata. See: http://mpeg4ip.sourceforge.net/
