That looks like the good old "scrambled icons" bug. It first occurred
in 10.2, I think, and gets worth the longer the Mac's been running
without a restart. I think something is stomping on its own memory in
Icon Services.
It used to be worse, where entire icons would end up as colourful
pixel salad, or you got four smaller icons strangely skewed instead
of one bigger icon. I thought it had been fixed in 10.3 or so, but I
do occasionally get that one as well, so I guess they managed to only
partially get rid of it.
You may want to file a bug as well. Maybe they haven't yet noticed
that the bug is still there.
