Title: How to remove a stantard item of the dock menu of an application

HI All,
 
I would like to remove the quit menu item of the dock menu of my application.
Not like disabling all the dock menu,  the requirement of the application is only removing the quit item.
I don't know how to do it. Would any one be  so kind as to give me some advices and a simple example ?
