What fonts are guaranteed to be on a user's machine?

Sorry if this has been covered before. I have an application that I'm "skinning" and I want to use certain fonts on pulldown menus, buttons, and the like. I know it's safest to use things like systemFont, boldSystemFont, etc., but what if I want to use a font like Helvetica? If, in fact, I can't count on a font being on the end-user's machine, is there a simple way to include a font in the application's bundle and install it from the application -- without making the user go to the trouble of installing the font manually?
