I'm sorry to be asking so many basic questions, but I have been
struggling for a month to write an application involving multiple
table views and I really need to get it working so that I can get on
with my real work. I have read everything I can find and am still
struggling to figure out what I need to do.

...which may or may not help with question above. It does help to take
some of the mystery out of the various options you see in the bindings
panel in IB when selecting various objects.
