Please note that in the publicly available information about Core Data, only three types of data store are listed (XML, binary, and SQLite).

Also if you use Core Data I'd assume, since it will be core OS X there'll end up being all kinds of third party tools to play with the data store.

Again in the publicly available information, I can't recall any mention being made of the ability to connect to other data stores. Without any public commitment to such a feature, I would not suggest relying on it for an application.
