I don't think the PDFKit is intended for drastic editing of the structure of original PDF. I tried to insert a page from one into another PDF document and it crashed. I think the only editing you can do is the annotations and attributes of a PDF document. Apple's documentation isn't very clear about this.
The value of the PDFKit would be enormous if you could easily use it as an editor of outlines and pages. Maybe the relationship between Adobe and Apple has to become more complicated before Apple would dare to really replace Acrobat. ;-)
