What do you want to do with the SSH server?

If you are looking to do a variety of sftp manipulations or something, it's probably going to be easiest to use the command line tools provided with the system. If you want to do something specific at the protocol level, then you might look at using NSStream, or use CFNetwork directly if you need to support older versions of Mac OS X.
