Take a look a GPGMail source code it will be helpfull.
As GPGMail is quite a complex example, you may also be interested in
looking at GrowlMail, available via SVN here:

Though you prolly just want to peek at the source, if you want to build
it you will need to checkout the entire trunk and build the Growl
framework before building GrowlMail.
