non-immediate NSController action with tables

When managing a table using an NSArrayController and separate fields in which to enter the data (rather than editing the table directly), the data changes are applied as soon as the individual field editing has been finished. I'd like to put the application of the change off until I finish all of the changes and hit a button, to 'record' the changes. This would also give me the option of having a 'cancel' button, to toss out the changes.

How would I implement something like this?
