Disable cut, copy etc.

I need to disable the cut, copy, paste etc. commands in my custom text field. What is the best way of doing this?

I have subclasses of NSTextField, NSTextFieldCell and the Field Editor of the text field so I'm not really sure which one I should be looking at either.

Also, I'd like to know how to stop the "I" beam appearing when I move the mouse of the text field.
