Hi,
You might like to look at the source/project for my utility SkypeMenuX
which is a menu item (no dock menu) that communicates with Skype.
It doesn't launch any external apps, but there's plenty of
documentation on the net about how to use NSApplication et al.
One trick that is hard to figure out is how to get your faceless app
to have windows (not just dialogues) that the user interacts with and
that have the correct window stacking.
Take a look at the custom about window (using Webkit) and the
preference window code.
Go to http://mark.aufflick.com/software/skypemenux - you'll find a
source tgz download in the downloads link, or you can click through to
the sourceforge project where the code is in cvs.
It's a little while since I wrote it, but feel free to ask any
questions about the code (there may not be quite enough comments...)
