For what it's worth, I think using Apple icons is clearly okay in
certain cases, such as the standard blue folder, the gear (action
menu), and the hard drive icon. These are part of the OS itself, and
the user needs see them as-is if they refer to the same thing in your
app.
Don't invent a new hard drive or folder icon.
I'm sure it's also fine to use an application icon when the action
which that icon triggers interacts specifically with the depicted
application, as such Mail, Address Book or iCal. I'm sure using
Preview's PDF document icons is also fine. (All assuming you're
making a Mac OS X app, by the way.)
Do not use icons which are clearly application specific. An example
of something to *not* do is re-use toolbar icons from Aperture.
You're probably also safer in general with apps that are included
with the OS rather than sold separately.
