To put it another way, I don't think anyone has rewritten their Cocoa app in Carbon or QT, but plenty have gone the other direction.

Well, probably not the UI, but it definitely can be an 'upgrade' for some internals to use Carbon.
E.g. to get rid of path / URL based filesystem tracking, use UTIs or at least more than file extensions for file typing, and sometimes just to get some real diagnostics WHY some API calls failed.
