There should be a tech note somewhere in there (or maybe it's a chapter in Xcode's help) about debugging plugins. Essentially, you use Xcode's menus to create a new executable entry for the host application and make that the executable to launch when debugging. On that executable you can set the environment variables as described in your tech note.
