David,

There was a great write up on this over at CocoaDev:

I found it very helpful, especially when I was helping with VirtueDesktops
and we were trying to track a bug so we added lots of log messages. It made
the console.log fill up *fast* so I suggested we "reroute" the log messages
to a new log. It worked beautifully!
