For Cocoa integration with ODBC, you can use Andy Satori's open source (BSD license) ODBCKit framework:

It includes a working Xcode / Objective-C example. You can also look at the Xcode / Carbon example here:

Both examples should give you a good idea of what you need to do to get a project running with the /usr/lib/libiodbc.a library that Apple ships with Mac OS X.
