I realized the question was not well put.
Basically, I would like to switch the language of the spellchecker of
the application in focus. I realize this might be tricky, and probably
not doable... That's why I thought about modifying the plist of apps
preferences; unless this preference is not stored in a plist...
What do you think?

Please do not modify preferences directly. Use NSSpellChecker's -
