Just look at the sample code in /Developer/Examples/Sync Services. I found the People one to be especially helpful.

Also, is it possbile to have a client sync with more than one other
client ?

Of course; that happens by default unless the entities in the client have been disabled.

There is a stand-alone list for Sync Services that you might want to consider joining, called syncservices-dev.
