This also works on a per-application basis. Just replace
NSGlobalDomain with your app's bundle identifier. For example, to
speed up sheets in Preview.app, use the following:
defaults write com.apple.preview NSWindowResizeTime .001

If you run the following before launching your app, you'll get
speedy sheets.
defaults write NSGlobalDomain NSWindowResizeTime .001
Return to normal with
defaults delete NSGlobalDomain NSWindowResizeTime
