That’s not true — you can access the apps’ interchange files, which are just regular property lists. (For example, ~/Music/iTunes/iTunes Music Library.xml.) These files are explicitly provided for data interchange — they’re not the actual databases the apps use, just shadow copies in a public data format.
Karelia’s open-source iMedia Browser framework has code for doing all this.
