Happens for me too! Never noticed that before. How weird. It shows you the
grayscale profile in the link information dialog, but it doesn't seem to use
it anywhere - not in proofing, nor export. You would expect it to embed the
grayscale profile if you select leave color unchanged and include ICC
Profiles, but no, it just includes the image data. If you select CMYK or RGB
as the color model to export, it won't convert the grayscale images either.
The only way to get InDesign to use grayscale profiles is to use PDF for
your images. InDesign will then render the grayscale PDF correctly and
include the grayscale ICC profiles if you select that. However, it still
won't convert to RGB or CMYK if you select that.
