From the other things you've said its clear these folks are not ICC-savvy,
and you will have your work cut out for you if you choose to disagree with
them on the topic. But let me reassure you that Photoshop 6 can do an RGB
proof for most any RGB device, and that even that function is not really even
necessary for a LightJet or Lambda, since the workingspace image on a
hardware calibrated monitor is very close to the output you get from either
of these photo-printers, if they are properly setup and profiled.

Well, I can (and regularly do) place photo-printer output next to the same
image in a calibrated monitor, and they match beautifully. So its not
impossible... whether these people are capable of the same is a different
question.

Well, my inkjet reference prints match my monitor as well, but its hardly
necessary to produce one for every image I want off a photo-printer. They
are being cowboys, and intend to thorse their machines around to get a rough
match to your inkjet print (under what lighting, I wonder? <G>) but thats not
the proper solution, and is unlikely to get you the quality of result that a
good profile for the device would. If they are offering to match
any-old-inkjet-print you offer them, then they are not assuming your print is
a good representation of the digital file, but rather that they can flex
their muscles and force their machines into making a match for whatever color
is in your print. This kind of frontier attitude (sorry Fuji...) is based on
2d curves adjustments and does not offer the level of color matching that a
true 3d LUT based profile for the device can.
Hopefully Neil will chime in with more local info about color managed service
providers in Paris.
