Pantone does provide ICC profiles for their inks, so, in a paper specific sense, you could determine the gamut. There are other factors of course; such as bronzing in the dark areas, gloss differential between inked and noninked areas, pigment density, bleeding, settling, clogging, longevity, and a range of others, that don't necessarily show up with the gamut and d-max data a profile will provide.
