The same thing happens with an InDesign produced PDF document
containing tagged and untagged RGB and CMYK objects, I can confirm
this. However, all objects have been converted, except for untagged
RGB which has original numeric values retained. If you resave as a
PDF, profiles are retained.
I think Preview might just assume that it can't display profile
information for PDF, since as a container format it can have multiple
source profiles, even though technically Photoshop-PDF does not.
Preview may not distinguish between Photoshop-PDF and PDF from other
applications.
However, the loss of profile information is not good. A conversion
has occurred in an attempt to preserve color appearance, but that's
for naught if there is no embedded profile.
