Thank's to those who have contacted me offlist.
You all wrote something like:

But that is not at all the same as in Photoshop CS!!!
In CS2, there is no way to activate these features without making a trip to
the Custom Proof Setup dialog because these controls are not accessible
*outside* of this dialog, the way they were in CS.
What this means is if someone sends me a CMYK file with an embedded profile,
like "PressA", how am I supposed to softproof the image, simulating its
paper white, without having *first* extracted the embedded profile and
dumped a copy into the ColorSync folder? Because the Custom Proof Setup will
not allow setting the Simulate Paper White *independently" of the Device to
Simulate entry. Unless Adobe would have been smart enough, in their infinite
wisdom, to offer a "Same as Assigned profile" option at the top of that
list.
