When you separate the channel by changing the image mode to multichannel, the channels will be threated as grayscale images and Photoshop applies your grayscale working space profile when calculating the L values for the info panel. When you set your grascale working space to gamma=1 the info panel will show L=76 for K=50% (was L=50 before switching to multichannel), that means the percentage values will be mapped linearly to Y in this case.
