I am always doing this sort of thing.
I have a great tool called Pacifist which lets you look inside an
Apple installer package and extract or reinstall individual files.
It is also great for checking through Receipts in /Library/Receipts
to see exactly what package installers did. Well worth the shareware
fee for me at least.
