Denis,

One thing you can do (although this is away from WebObjects) is to drag the file to the Excel icon while holding down the option and command keys.

Alternatively you can change the pop-up menu displaying "recommended applications" to "all applications" to enable Excel as a choice in the "open with" procedure.
