What are people out there using for version control (e.g. MS Visual Source Safe)?

CVS (Concurrent Versions System) is a free, open-source source code management system included with OS X (http://developer.apple.com/internet/opensource/cvsoverview.html).

Many seem to like the commercial product, Perforce.

Both CVS and Perforce are at least minimally supported by Xcode.

And is there a Mac based version control application? Not unix/linux.

Since OS X is Unix, not sure what you mean. A free CVS GUI client, CVL (http://www.sente.ch/software/cvl/), runs under OS X and provides better coverage of CVS than Xcode although you may still need to occasionally use the CVS command-line interface.
