As another poster said,
rm -rf /usr/X11R6
rm -rf /etc/X11
To really remove everything, you'd also want to:
rm -rf /Applications/X11.app (or just move it to the trash via the gui)
rm -rf ~/Library/.xinitrc (if this exists, and isn't one you've
customized and need to keep)
And as appropriate:
rm -rf /Library/Receipts/X11User.pkg
rm -rf /Library/Receipts/X11Config.pkg
rm -rf /Library/Receipts/X11LibApple.pkg
rm -rf /Library/Receipts/X11SDKforMacOSX.pkg
